Shatto Milk Company is a century owned dairy farm in Northern Missouri centrally located between Kansas City and St. Joseph, Missouri.  Not only do we have the freshest milk in the area but we are also known for our exceptional, high-quality cheese curds and artesian aged cheeses. We have an immediate opening for a Cheese Maker to join our team.

Job Summary:

The perfect candidate will have recent experience and, accurately perform all cheese making functions from proper milk handling through the cheese making process to the packaging. This position requires extensive cheese making experience and an understanding of the cheese-making GMP’s.  Attention to detail is crucial

Duties and Responsibilities

     Receive and pasteurize milk to company specifications

     Operates all cheese-making equipment, including pasteurizer, cheese cutter, vats, pressers and  molds.

    Maintain accurate records of cheese making process including pasteurization charts, temperatures, ingredient and product traceability and aging times,

    Follow company established recipes to meet high-quality customer expectations.

    Comply with all required sanitation procedures to insure the cleanliness of the cheese-making facility and equipment

    Implement safety measures to safeguard against allergens or bacteria exposure in raw milk or cheese cultures.

    Monitor temperatures, pH levels and humidity in cheese vats to maintain optimal conditions.

    Conduct tests on cheese samples for moisture content, acidity, saltiness, bitterness, and other taste-effecting attributes.

    Package cheese and label for sale

    Manage inventory and prepare order for supplies

Qualifications

Certification in cheese-making

Experienced in cheese curds and aged artesian cheeses

In-depth knowledge of the cheese-making processes (cultures, aging process) and commitment to quality

Experience with operating, maintaining and cleaning cheese-making equipment

Knowledge of HACCP and all food safety regulations

Dedicated work ethic with the passion to learn new types of cheeses

Meticulous record keeping skills

Compensation:

Starting salary $50,000 and up commensurate with education and experience
