Assistant General Manager — Beautiful Rind

Beautiful Rind is a cheese shop, 38-seat restaurant, and classroom in Logan Square, Chicago. Food & Wine has named us one of the best cheese shops in the U.S., and our team has won Best Cheesemonger in Chicago five years running. We take cheese seriously, with six ACS Certified Cheese Professionals currently on staff.

The Assistant General Manager provides day-to-day floor leadership across retail, dining, beverage service, and event space. They also partner with the General Manager, Head of Education, and Owner on classes, tastings, and private events. You'll be on the floor, behind the counter, in the walk-in, and in front of guests every week, and take on full leadership authority whenever the GM is off-site, with support from the Owner.

Key responsibilities

• Provide day-to-day floor leadership across retail, kitchen, restaurant, and classroom operations, moving between them and prioritizing in real time as the day's needs shift
• Support retail purchasing of cheese, other foods, paper goods, and alcohol in line with set budgets and goals. The General Manager is the primary buyer; the Assistant General Manager places orders as assigned and covers ordering in the GM's absence
• Respond promptly and professionally to incoming catering, private event, special-order, and customer requests
• Assist in maintaining POS and event/reservation platforms, currently Toast and Tock
• Supervise the training of new staff
• Provide day-to-day supervision of staff, ensuring all team members work safely and in line with Beautiful Rind's goals and policies
• Communicate promptly to the GM and Owner on any customer, staff, building, equipment, or safety issues
• Review and coordinate execution of the weekly event and production sheet
• Lead cheese classes and tastings as part of Beautiful Rind's education program
• Other duties as assigned to ensure a successful, safe shop, restaurant, and classroom

Reporting & authority

Reports directly to the General Manager, with direct visibility to the Owner. May hire, fire, and administer corrective coaching to employees in consultation with the GM or Owner.

Schedule

Typically 40–45 hours per week, emphasizing evenings and weekends. Expect occasional longer weeks around holidays and large events.

Compensation & relocation

• Base salary: $54,000–$62,000/year, salaried and exempt
• Additional bonus pay for classes and events led as lead instructor
• Relocation assistance available, structured as a forgivable advance on a graduated repayment schedule over your first year of employment
• Nationwide search: candidates outside the Chicago area are encouraged to apply and will be supported in relocating

Qualifications

• 2+ years of leadership experience in restaurant, retail, or hospitality settings; restaurant and/or independent cheese shop experience strongly preferred
• Comfortable operating across front- and back-of-house: beverage service, kitchen, and retail counter
• Cheese knowledge or strong enthusiasm for artisan cheese and specialty foods; ACS CCP a plus but not required
• Demonstrated experience supervising staff, including hiring and disciplinary action
• Illinois Food Sanitation Manager certification, or ability to obtain one within 60 days of hire
• Located in Chicago, or willing and able to relocate to Chicago

Physical requirements

The following are essential physical functions of this position, which may be performed with or without reasonable accommodation:

• Standing and walking for extended periods during shifts, as well as sitting for extended periods for administrative and planning work
• Lifting, carrying, and moving items weighing up to 40 pounds, including cheese wheels, cases, and event supplies
• Safely operating professional cooking and food preparation equipment, including slicers, ovens, and fryers
• Frequent bending, reaching, and working in refrigerated environments such as walk-in coolers
